Head Cheese

!±8± Head Cheese

This is the time of year when head cheese seems to be popular. We always have it around the holidays. Most of the stuff found in supermarkets does not compare to the home made kind. Most store bought is too gelatinous for my taste. Probably because the list of ingredients includes gelatin. There is no gelatin in home made head cheese. All that is needed is a hog's head, water and spices.

To make head cheese, clean the hog's head by removing the snout, eyes, ears, brains and all the skin. Trim away all the fat from the head and cut it into four pieces. Place in a crock or enamel container. Cover with a solution of 1/2-cup canning salt to 1-gallon water. Make sure the pieces are completely covered. Let it soak for 5-hours to draw out all the blood.

Next drain the salt solution and rinse several times with clear water. Place in large pot and cover with water. At this time we usually put the heart in the pot too. Bring the water to a boil and cook until the meat falls off the bones. Let cool until it is cool enough to handle and pick all meat from the bones. Strain the broth and measure 2-quarts.

Next chop the meat into small pieces, there should be about six pounds. Put the meat into a clean pot with the 2-quarts of broth. Add 3-tablespoons salt, 4-teaspoons black pepper, 3-teaspoons red pepper, 2-1/2-teaspoons allspice and 3-teaspoons cloves. Mix together well and bring to a boil. Simmer for 1/2-hour. Cool slightly and pour into pans. I use either 9x13-inch pans or loaf pans. Refrigerate overnight before slicing.

I like head cheese sliced thin on a piece of rye bread with yellow mustard and raw onion. Yummy. If there is any left it can be frozen. Now, on to the pig's feet.

Bread Maker Prepares Dough So You Don't Have to Knead It

!±8± Bread Maker Prepares Dough So You Don't Have to Knead It

Who doesn't like the smell of bread baking? Most people find it a pleasant aroma whether it's in a fine artisan bakery or in their own home.

To make bread the ingredients must be measured out accurately, or in some instances a pre-packaged mix can be relied on. The ingredients must be mixed properly and allowed to set in a warm place. The dough is allowed to rise at least once, the air bubbles squeezed out in between rises. Dough is then shaped into loaves, rolls or a specialty bread, or spooned into a baking vessel, and finally baked in an oven.

There are two ways to make bread in your kitchen. In either case you have to do the measuring of ingredients, but how involved you want to be after that is up to you. If you have a bread machine, all you really have to do is measure the ingredients into the non-stick pan and hit a button or two on the bread maker control panel. In a few short hours you'll be treated to homemade bread.

The other way of making bread is to get right in there and measure and mix the ingredients, and then wait for a while to let the dough rise. After a time the dough will need to be 'punched down' where the air bubbles that have collected are removed and the dough is allowed to set and rise once or twice more, depending on the type of bread. Shaping the dough is up to you and if you don't have much practice, the look of your rolls or loaf may tell that you don't.

Some folks have trouble kneading the dough. Either their dough gets too hard from too much kneading, or their hands hurt from working the dough too much. Arthritis sufferers could use a bread machine to just make the dough. Until you know the look and feel of bread dough that's had enough kneading, it's much easier to just let the machine do the work. Also, the time factor alone might lead one to use a bread maker to make their bread dough. However long it takes, for you to mix the ingredients and knead the dough once or twice, is time saved when your dough is prepared by a bread machine.

To use a bread machine to make the dough and not bake it, look for a bread 'dough' cycle. One popular maker mixes the ingredients for 25 minutes and then lets the dough rise in a warm setting for 73 minutes more. It takes an hour and forty-five minutes to get to the point of removing the dough from the machine, but you don't have to do any kneading.

That's one nice thing about a bread machine. It's pretty much a hands-off operation. Once you fill the pan with the ingredients, you don't have to do anything else but clean up. The buzzer sound or count-down clock will tell you when your bread or bread dough is ready.

Complete and Thorough Review of Zojirushi 2lb Home Bakery Supreme Breadmaker

!±8± Complete and Thorough Review of Zojirushi 2lb Home Bakery Supreme Breadmaker

There's a good reason why Zojirushi is Japanese for 'elephant brand.' It feels as heavy as an elephant itself, with its 27 pounds of bread making bulk. Discover whether or not it will fit under your cabinets first. The Zojirushi is big, with a width of 17 inches and depth of 12 inches. It's also 9 inches in height, so think twice before putting it under your cabinet, as you'll still need to be able to lift the lid in order to use the breadmaker.

You can produce a regular 2 pound loaf with the Zojirushi 2lb Home Bakery Supreme Bread Maker. The shape resembles regular oven bread pans in its horizontal shape. The pan measures 5 inches x 9 inches x 5 inches in terms of general size. One and a half pound loaves are also possible. The lid has a high dome, allowing for a lot of rising of the dough.

You can make raisin bread or pizza dough with this breadmaker, making it diverse in terms of its baking capacity. You can discover other functions for it as well. Jam can be made also. You can mix and prepare homemade jelly from fresh and canned fruits. Those who want to can make cakes as well. The Zojirushi 2lb Home Bakery Supreme Bread Machine will more than likely out-perform and outlast any other machine you've seen or used.

Even though it's powerful, it will not create a great deal of disturbance as it kneads. The controls and display have been put on a slanted panel causing them to be simpler to see and use than the regular top and side mounted display panels. An important fact about the Zojirushi Bread Machine is the length of service of the brand, which started operating in 1918 and has been making breadmakers since 1988. This company pays attention to what their customers want and like, so advances are gained to each new version they create, and they stay on top of issues constantly.

Often, with a typical Bread Maker, you can pre-program them to make the bread prepared for your awakening, so there is no need to wait on your part. The Zojirushi bread maker tendsto be quieter than many others. This is superb because, if you reside in the real world, you certainly don't want to hear the knocking and thumping that is experienced along with the majority of bread makers.

With the Zo, however, you can have confidence in their super quiet processing, so you will sleep easily through the night without being awakened to noisy bread kneading. Many bread makers have many selections so you can customize your bread, from the crust color to the cycles used to make dough only. With the Zojirushi bread maker you're able to create, and save, 3 self programmed cycles that are uniquely your own. Advanced bread makers will enjoy this ability since allows them to program in old recipes intio their newBreadmaker.

Another feature will be a distinct blessing for people who live through hot summer months, and regular electric brown-outs due to so many people having their air conditioning run all the time. If the power will fluctuate in your area, or clicks off/on a lot, the Zojirushi just resumes a the same place it was interrupted. This feature allows you up to 10 minutes to restore power. It can annoy you to make bread on breadmakers that are not as good as the Zo. You'll end up throwing away half-baked remnants when the machine resets because of a temporary power loss.

You'll find it easy to comprehend the plain English of the instruction book, and even get some recipes. You may see some spelling errors within the manual, but none of them will impact your ability to bake great batches of bread. Zojirushi takes care of its customers, and as a result have a a 800 customer service number that you can call with any questions you have with it. While most of the other breadmakers are built with a wire handgrip that bends on their removable baking trays, the Zo doesn't offer this. When I phoned the help line, they quickly and happily informed me that it would be better to use oven mitts when removing the larger horizontal cooking pan.

A different situation that happened was the lack of levelness of the top of the bread. When I phoned Customer Service, they explained that this happens now and again with recipes that are heavier during the cycle for kneading. It is able to be easily solved with a spoon by gently leveling off the top of the loaf before it commences baking. No matter what kind of bread you desire - fast-rising yeast bread, bread with no gluten, sourdough bread - you can get it all with the Zo. If you need a breadmaker that, despite its mass, can deliver quality breads to you even overcoming a power outage, look no farther than the Zo for all your baking needs.
